This is a delicious recipe I have adapted from Dot2trot.com.  Its packed full of roasted chicken, marinated artichokes, spinach and cheese and is a lovely hearty meal best enjoyed with a crunchy salad.  A half portion may be plenty for most lunch appetites. 

Lo-Carb, Gluten-free

Ingredients: Roasted free-range chicken, marinated artichoke hearts (oil, vinegar, spices), spinach, cream cheese, Parmesan cheese, mozzarella cheese, chilli flakes, sour cream, home-made mayonnaise (Dijon mustard, egg, salt, vinegar, oil), garlic, onion, seasoning.

Potential allergens: Eggs, dairy products.  Other potential allergens are used in our kitchen and cross contamination may inadvertently occur.

To reheat from thawed: Remove sleeve and film and place meal in pre-heated oven at 1800C for 20-30 mins until bubbling and top golden. Can also be thawed and reheated in microwave. To reheat from frozen: Remove sleeve but leave film in place and place in pre-heated oven at 1600C for 40-45 mins then remove film, increase heat to 1800C and cook 10-15 mins more till bubbling and golden.

Store in a freezer at below -180C.
