These West Indian spiced lamb shanks are slow cooked in a mild curry mix.  They would pair well with some rice and a simple green vege.  This is a recipe from Australian celebrity chef Pete Evans, who's an advocate of lo-carb eating.  These lamb shanks are rather large and I find one of these portions does me two meals. 

Gluten-free, Dairy-free

Ingredients: lamb, coconut oil, onion, carrot, celery, garlic, ancho chilli, ginger, coconut milk curry spices (coriander, tumeric, cumin, star anise, fenugreek, mustard, allspice), tomato, thyme, bay, salt, pepper.

Reheating: For best results defrost fully and reheat gently in pre-heated oven at 1600C for 20-30 mins until sauce bubbling and meat heated right through.
